Baked Feta Pasta

Alright friends have you tried the trending Baked Feta Pasta? It was so popular that Finland SOLD OUT of Feta cheese! I also found out this is its third wave of taking over the internet and for good reason, IT IS DELICIOUS and easy!

So for the recipe

  • 2 pints (17 1/2 ounces / 500 grams) cherry or grape tomatoes

  • 1 head of garlic, top trimmed and cloves intact (you could just use 4-5 cloves or minced garlic) I just really love garlic

  • 1/2 cup extra-virgin olive oil, divided

  • Salt

  • 1 block (7 ounces / 200 grams) Greek feta cheese

  • 1/2 teaspoon crushed red pepper flakes

  • Ground black pepper

  • 12 ounces of your fave pasta (pro tip-save some pasta water)

  • Fresh basil leaves, chopped or whole

1. In a 13x9 casserole dish add your tomatoes and drizzle about 1/4 cup of olive oil and season with salt and pepper

2. Add the block of feta cheese in the middle of the tomatoes and drizzle remaining olive oil, season with salt, pepper, and red pepper flakes add in the head of garlic.

3. Bake in the oven at 400 for 30 min.

4. While in the oven get your pasta started and cook al dente, make sure to reserve a bit of the pasta water (that’s the secret to making a great pasta sauce!)

5. Once the baked feta comes out, squeeze out the yummy garlic pieces and mix up all the cheesy goodness with the tomatoes and garlic.

6. Add in your cooked pasta and sprinkle on your fresh basil and give a good mix, add in some pasta water for it to all come together and more salt & pepper if needed.

7. Enjoy.

I really enjoyed making this pasta, it was easy, fast and super delicious.
